Ingredients: 250g of peppers 250g of tomatoes 250g of aubergines 250g of onions 3 teaspoons of olive oil salt
Clean and chop the vegetables and begin to fry them in stages, after seasoning. Put the pepper in first; after five minutes put in the aubergine cut into strips and drain; a few minutes later add the onion and, finally, the tomato. The vegetables should not be overcooked, to maintain their texture. You can also add some finely chopped potatoes, putting everything on the heat in a covered frying pan for a few more minutes.
