Ingredients for 4 people: 4 spider crabs, each of 800g 1 chopped onion 1 chopped leek 2 peeled and chopped tomatoes 40g of butter 1 spoonful of breadcrumbs 2l of water 1dl of olive oil 2dl of brandy pepper salt
Wash the spider crabs and cook them in plenty of water with salt for 10 minutes. Remove from the cooking dish, allow to become lukewarm and remove the meat from the legs and the shell. Recover the liquid from inside the shells, wash them and dry them. Crumble the bread and put aside. Heat the oil and fry the onion and the leek. When they change colour, add the tomatoes. Continue cooking for 7 minutes and pour on some brandy. Flambé and add the crab meat and the reserved liquid. Season with pepper and salt. Allow to cook on a low heat for 5 minutes. Fill the crab shells with this mixture. Sprinkle with breadcrumbs, divide the butter between them and grill.
