Ingredients for 4 people: 8 large tomatoes 100g of pork 100g of beef 100g of cured ham 1 medium-sized onion 1 hard-boiled egg olive oil salt freshly milled pepper mint

Preparation
Scoop out the insides of the tomatoes and place them on a baking tray or oven dish. Fry the onion, peeled and chopped very finely, in a frying pan with olive oil. Separately, chop the beef, the ham and the pork into cubes and add everything to the frying pan when the onion is brown. Once the meat is fried, put aside some piece of ham. Put the rest into a mincer together with the hard-boiled egg to achieve an even mixture. Then season it with salt and pepper and stir everything well once more. This mixture is used to stuff the tomatoes. Then put one of the small chunks of ham, previously put aside, on top of each tomato. Once place on the baking tray, pour a dash of oil over the top and leave them in the oven for 15 minutes or until they are well done.

Serve decorated with a spring of mint.
