Ingredients
Ingredients for 4 people: 8 eggs 1 large onion 100 g of green beans 1 courgette (small) 1/2 a red pepper 75 g of peas 1 green pepper 150 g of potatoes 50 g of spicy sausage 1/2 cup of olive oil salt

Preparation
Mince the spicy sausage, leaving a few slices for garnish. Peel the potatoes, wash them and cut them into thin slices. Cut open the pepper, take out the seeds and dice it. Trim the green beans if necessary and dice them. Peel the onion and dice it finely.Heat the oil in a wide-based frying pan and sauté until transparent. Add the spicy sausage, stir a few times and add the vegetables, leaving to cook on a low flame until all the vegetables are soft; drain in a sieve to remove any excess oil. Beat the eggs in a wide bowl, add the vegetables and the spicy sausage, season, mix well and prepare the omelette with a little oil in a pan.

Presentation
Serve garnished with the slices of spicy sausage.
