The Kursaal in the city of San Sebastián hosts this gastronomic gathering, which has established itself as a global benchmark for haute cuisine and the discovery of surprising culinary trends. It was the world's first international gastronomy congress and consistently features leading national and international chefs who have shaped the history of gastronomy.Under the slogan “The spark that lit the fire”, the 2026 edition commemorates the 50th anniversary of the birth of New Basque Cuisine and pays tribute to the movement that revolutionised Spain's culinary avant-garde.

At each edition, different countries take centre stage through talks given by some of their chefs and food critics. The list of speakers who have taken part in this event includes names such as Rasmus Munk (pioneer of ‘holistic cuisine’ in Denmark), René Redzepi (the father of New Nordic cuisine), José Andrés (ambassador of Spanish cuisine in the US), Leonor Espinosa (who champions Colombia’s culinary traditions), Yoshihiro Narisawa (a pioneer of sustainable cuisine, whose restaurant is considered the best in Japan), Matthe Lightner (who revolutionised Oregon’s culinary scene with avant-garde techniques) and Alex Atala (one of Latin America’s most influential chefs).In short, San Sebastián Gastronomika is a unique opportunity to discover first-hand how culinary milestones have been achieved over the years and how the aim is to continue shining a spotlight on fascinating future projects.
