'Bollos de chicarrones' (buns with pork scratchings)

  • Ingredients

    Ingredients: A 1 kg poppy seed bread Four eggs 250 gm of finely chopped pork scratchings 100 gm of lard 300 gm of sugar 1 cup of orange juice

  • Preparation

    Heat the pork scratchings with the lard. Take the poppy seed bread, break into crumbs and mix it with all the ingredients. Only use the egg yolks, and if the mixture is too soft, add flour until the mixture can be worked with the hands. Shape into balls and place on a baking tin greased with fat and make little hole using your finger. Before placing in the oven, glaze with the egg whites and sprinkle with sugar.
