Ingredients for 4 people: one scorpion fish weighing about 800 g., 100 g. smoked bacon ½ one tablespoon chopped parsley, 1 onion, finely chopped, 3 cloves garlic, 1 bay leaf ½ glass of white wine, 2 tablespoons olive oil, salt, pepper

Preparation
Open the scorpion fish down the middle and season with salt and pepper. Fry the chopped onion and garlic in the two tablespoons of oil for 8 minutes. Place half this fried chopped mixture inside the scorpion fish, add the bacon, then bake in a medium oven for 30 minutes. Remove from oven and serve.
