'Soldaditos de pavía'
Ingredients: 500 gm of strips of cod 1 large baked red pepper, cut into strips 1 beaten egg Lemon juice Oil and salt Ground pepper Sweet pepper Flour
The cod, with its skin and bones removed, should be left to soak from the day before; and be well drained and dried before preparation begins. Prepare a dressing of paprika, ground pepper and the juice of a lemon in a bowl, then dilute with olive oil. Soak the cod strips in the dressing for three hours. Then drain on kitchen roll, basting the pieces in the beaten egg then the flour. Next fry in plenty of very hot oil.
Serve immediately you take them out of the oil, wrapped in a strips of baked red pepper.
