    Ingredients for 4 people: 1 duck Salt Pepper Thyme Bay Leaf 2 oranges 2 spoonfuls of olive oil 2 apples 1 glass of dry white wine Mandarins 20 gm of starch (optional) The juice of 1 orange

  • Preparation

    Take the washed and prepared duck, salt and sprinkle with pepper and thyme, cover with olive oil and stuff with slices of apple and orange, the bay leaf and chopped parsley. Fry for 10 minutes until golden brown and then roast on a medium heat for 60 to 90 minutes, basting at regular intervals with white wine and its own juices. The juice is clarified with a little white wine, adding the orange juice, grated orange rind, and if you wish, a little of the concentrated meat juice.

  • Presentation

    The duck is served on a dish, garnished with mandarin segments and covered with part of the sauce, the rest is put into a separate sauce boat.
