Boliches de Embún
Ingredients: boliches (a type of round bean), pig’s ear, pig’s tail, onion, a few cloves of garlic, bayleaf, parsley, 1 tablespoon of olive oil, salt, and a hard-boiled egg.
Soak the boliches overnight. Wash and rinse them and put them in a pot with a piece of pig’s ear, a piece of pig’s tail, half an onion, a few cloves of garlic, a bayleaf, a stem of parsley, and a tablespoon of olive oil. Bring to a boil and leave to simmer. When the beans are soft, add salt and mix in a hard-boiled egg yolk.
