Ingredients for 4 people: 6 egg yolks 250g sugar 3dl of water For the caramel: 3 spoonfuls of sugar 1 spoonful of water
Put the sugar with the water in a saucepan and allow to cook until the syrup has a colour. Bathe a mould with it and put aside. Put the sugar and water into a casserole dish and make a syrup that should form a little strand when you take some and rub it between your fingers. Beat the egg yolks and slowly add the syrup, stirring with a whisk. Strain and pour into the caramelised mould. Cook the bain-marie in the oven at 150º degrees for about 20 minutes. When the tocino has set, remove from the oven, allow to cool and tip out of the mould.
