Ingredients for 6 people: 250g of flour 250g of sugar 250g of butter 6 eggs salt ground cinnamon
Leave the butter to soften for a while in a bowl. Work the butter energetically with a spatula until it goes creamy. Add the sugar and continue beating until it is completely mixed into the butter. Separate the egg whites and add these to the butter one by one. Continue working the mixture so everything is well blended together. Beat the egg whites until they are stiff. Add the egg whites into the cream of egg yolks and butter, mixing carefully with circular movements. Sift the flour to air it. Pour in the flour slowly and mix with an electric mixer on high power or with whisks. Add the ground cinnamon and mix again very carefully. Make the moulds with parchment paper. Fill them with the prepared mixture and put them on a baking tray, cooking them for about 15 minutes in a preheated moderate oven. (If you want them to have a layer of sugar on top, put it on in a little pile before putting them in the oven).
