We suggest a pleasant way of discovering Green Spain – through its gastronomy. From Galicia to the Basque Country, through Cantabria and Asturias, the famous cuisine of these regions is full of tasty recipes.
Shellfish, fish, meat, cheese… these are just a few of the delicious foods that you can taste in the four regions that make up Green Spain. But the local gastronomy is so much more than this. Why not try some of the typical dishes?©

Cantabria offers fish and shellfish, but also good meat, especially beef. It's worth mentioning the traditional "cocido montañés" stew, which you'll find impossible to resist! And don't miss the cakes and delicious cheeses.
There are endless possibilities in Galicia if you want to enjoy shellfish: crabs, spider crabs, king crabs, crayfish, scallops, mussels, lobsters… And there's much more: from excellent beef to popular recipes such as Galician "empanada" (a type of pie).
Choose "fabada", the most famous and typical dish in Asturias, made with beans, black pudding, chorizo, ham and potatoes. And don't forget dessert – like rice pudding, the Asturian dessert par excellence.
The Basque Country is the home of good food and the ideal place for revelling in a delicious meal. Try going to bars and having "pintxos", discovering restaurants owned by famous chefs, or tasting traditional fish recipes, for example.©

Try a "culín" of cider (a small measure of local cider drunk in one gulp) or learn how to pour it, go to a fish auction or see how cheese and yoghurt is made – these are some of the experiences you can enjoy when you visit this part of Green Spain.©
You'll be able to feel the magic if you watch the queimada ritual. Invoke witches, demons or spirits and enjoy this delicious drink made of "aguardiente" (a type of colourless brandy), coffee, sugar and orange and lemon rind, while a spell is recited.©

If you come to the north of Spain, you shouldn't miss the chance to taste cider in a traditional country house, as well as good cheese, like Asturian Cabrales. You can drink straight from the large barrels – you'll love it!
Come and discover the flavours of the sea in the Basque Country, with its most typical dishes. Some of these dishes are cod "al pil pil", a fish stew called "marmitako", grilled sardines or fresh cuttlefish with onions. And even better if you taste them at one of the ports.
