Scrambled eggs with ratatouille
Ingredients for 6 people: 3 small green peppers 250g of loin of pork 5 ripe tomatoes 4 hard-boiled eggs 8 fresh eggs 1 large onion 2 courgettes oil salt
Cut the peeled onion, pepper and courgette into small cubes;; chop the peeled, de-seeded tomato finely. Put the pepper and onion into a saucepan with oil on the heat. While they cook, cut the loin of pork into small cubes and, when the vegetables change colour, add the meat. After 5 minutes, add the tomatoes and the courgette and let them cook until they are ready. Remove the dish from the heat and put in the hard-boiled eggs, cut into small pieces. Mix everything well and check the salt. Put the ratatouille in a frying pan on the heat with a little oil. Beat the 8 eggs with a little milk so the ratatouille will not curdle when you add them. Stir carefully.
Serve the ratatouille accompanied by pieces of fried bread.
