Follow the trail of the authentic cheese with Designation of Origin Idiazabal, from its natural beginnings to its delicious end. You will see the flocks of sheep on their pilgrimage through the Basque countryside and the shepherds will open the doors of their farmhouses so that you can discover how they make the cheese...
The Alluitz Natura country house is located beside the Atxarte cheese dairy, in one of the most impressive mountainous landscapes in the Basque Country, the Urkiola Natural Park. The shepherd Patxi Solana invites us to join him here in carrying out his daily chores.

We will begin our adventure in the country house in the area where the farm and cheese dairy are situated, assisting Patxi in milking the sheep, and, if it is the correct time of year to do so, we will also help to shear them. With the milk obtained, we will make a fresh cheese or curd, or if we prefer, we can take part in a soap workshop using the leftover whey from the cheese-making process, assisted by the natural herbarium of medicinal plants and distinctive aromas which are to be found in the Urkiola mountains. We'll also have the chance to take part in a textile workshop, in which we'll learn how to convert wool using artisan techniques.

Following this, we will enjoy a stroll through the fields of this stunning natural setting, accompanied by Harri, the Border Collie sheepdog. You will be amazed at Harri's deftness at rounding up the Basque latxa sheep from one field to another, following the orders of the shepherd.

And what better way to cap the day than with a tasting session of the famous Idiazabal Designation of Origin cheese, with the people who produced it, who will also reveal to us the secrets behind its flavours and scents.
