Paella. Do you know it? It is one of the most typical dishes in Spanish cuisine and it comes from the Region of Valencia. Furthermore, it is the starting point for this gastronomic journey on which we would like you to discover this region in the east of Spain through its numerous dishes based on rice, the main ingredient of paella.

TYPICAL DISHES: seafood and mountain rice dishes

If you visit the beaches in the Region of Valencia or its coastal towns, make a note of these dishes and get ready to enjoy your meals.

Arroz a banda It is especially characteristic of the province of Alicante and it is a seaside rice. It is made mostly with coastal fish and its origins are associated with the fish markets, where the leftover fish was used to make the cooking liquid. A delicacy with different textures and great flavour at each bite. You can see the recipe at this link. Juicy rice with lobster Contrary to other rice dishes, this one has a sticky texture. The most traditional recipe uses lobster. Black rice Do you know where the colour comes from? From baby squid ink, the star ingredient of this seaside recipe where rice combines to perfection with its flavour.


The Region of Valencia is of a very diverse nature and there are lots of vegetable gardens inland, so the most traditional rice dishes use vegetables and rabbit. A good plan is to visit one of the most well-known inland towns and recharge your batteries with a delicious mountain rice dish.

Arroz al horno As with paella, there are lots of versions of how to make this, depending on the area. However, it is essential that it is made in an earthenware dish and contains black pudding, potatoes, pork ribs, chickpeas and tomatoes. Arroz con costra It is made very differently to other rice dishes and, although you can cook it in distinct ways, it usually mainly contains meat and sausages. It gets its name from the rice having a skin (costra) made by cooking an egg in an earthenware dish. It is very typical in the area of Vinalopó and La Vega Baja (Alicante). “Cullera i Mosca” paella It forms part of the most typical Castellón cuisine and is made with meat and snails accompanied by artichokes, green beans, tomatoes and red peppers, amongst other ingredients.

Tips and interesting facts

  • If you decide to make one of these recipes at home, we advise you to do so using a rice with the designation of origin Arroz de Valencia, characterised by their excellent absorption of flavour. There are three types: senia, especially juicy when cooked; bomba, perhaps the most well-known with a pleasant texture even when it is overcooked; and Albufera, creamy and firm after cooking.
  • There are lots of varieties of rice dishes to be made. There is a citizens' project that identifies the most traditional recipes. It is Wikipaella and you can find information in English on its website. Furthermore, you can see how different paellas are made in several interactive videos.
  • Traditional paella is made over a wood fire. Remember: this may be a good indication that you're going to enjoy a delicious paella.
  • They're always good but paella and rice dishes are recommended, above all, as main meals of the day.
