Bonito with fried vegetables
Ingredients for 6 people: 1.2kg of bonito 1.5kg of ripe tomatoes 2 large onions 4 green peppers olive oil flour salt sugar (optional)
To make the fried vegetables, cut the onion into cubes and put it to stew in a casserole with a little oil. Chop the peppers and add them to the dish before the onion turns golden. Peel, chop and de-seed the tomatoes and add them too. Let everything cook for 30 minutes on a very low heat. Then try the vegetables and add a little salt if they are too acidic. As for the bonito, cut it into rounds about 3 centimetres thick. Remove the skin and the bones and put the pieces under the tap to wash them with cold water. Then dry them with a clean cloth. Next, add salt to them and roll them in flour, shaking the pieces to remove the excess. Sautée the fish in a frying pan with oil, turning it over, and then put it in with the vegetables. Leave everything on the heat for 5 more minutes.
It is a good idea to allow the bonito to rest for a few minutes first. It must be served warm.
