Ingredients for 4 people: 800g sucking kid 200g kid's liver 2 small onions 2 ripe red tomatoes 1 red pepper ½ spoonful of La Vera sweet paprika ½ spoonful of La Vera spicy paprika 2 dried chorizo peppers 2 bay leaves 6 cloves of garlic pepper vinegar oil salt
Cut the kid meat into small pieces and season with the pepper. Chop the onions, the tomatoes and the red pepper and lightly fry them until they are golden. Meanwhile, fry the kid meat in a frying pan, taking it off the heat when ready. Brown the liver, garlic, paprika and the chorizo peppers in the same oil. Add a dash of oil. Put the meat into the casserole in which you are frying the onions, the tomatoes and the pepper and cover everything with water. Add the bay leaves. Pass the liver, garlic, paprika and peppers through a blender to get a fine paste and pour this over the meat. Continue cooking until the meat is tender and the sauce thick. The seasoning can be corrected before serving.
