Borage has traditionally been a vegetable for local consumption but nowadays it is widespread. It can be found both fresh and preserved.
Borage is a plant reaching a height between 50 and 60cm, with oval leaves covered with down. The stems are long and green. Normally, only the stem is used in the industry. Its flavour is soft, quite sweet and very pleasant. It is sold fresh and packed or preserved. It is normally used to form an important part of recipes like stews, but it is a lovely garnish for fish and meat dishes.
The production area includes all the Navarrese riverside, in the south of the province.
