Jamón ibérico (Iberian cured ham)

This ham is made with pure Iberian pork leg from acorn-fed pigs. It is an exquisite delicacy, and all of its parts yield excellent recipes, including the bones and the bacon trimmings. In Spain there are different kinds of pure, Iberian cured ham, classified according to the regions where they were produced. The most impressive Designations of Origin are Guijuelo, in Salamanca; Dehesa de Extremadura, which encompasses 85 municipalities in Cáceres and Badajoz; Teruel; and last, but not least, Sierra de Huelva, which includes hams from Cortegena, Aracena, Cumbres Mayores, Cortelazor and Jabugo.



Jerez is an Andalusian Designation of Origin for wines. It is the most internationally renowned of all Spanish wines. Jerez is obtained from grapes that ripe at a very high temperature, with prolonged sun exposure. There are different kinds of Jerez, depending on the process of elaboration. The most prestigious are: fino, manzanilla, oloroso, amontillado, palo cortado, cream, and sweet jerez. The drier kinds are great as appetisers, while the sweeter ones are ideal for dessert.
