Fabada

A typically Asturian dish, made with white beans, and pork products like salted ear, chorizo and morcilla (which are collectively known as compango). The beans used for fabada are known as fabes. They are white, cook very well, and have a delicious taste that absorbs the flavours of all the other ingredients in the pot.
