Ingredients for 4 people: 600g of small squid 2 onions 2 green peppers 2 ripe tomatoes 3 cloves of garlic 2 bunches of parsley pepper 20g of breadcrumbs 1½dl of white wine oil salt
Peel and chop the cloves of garlic and cover them with the cleaned squid, cut into rings. Allow to marinate in the fridge for 7 or 8 hours. Then put everything into an earthenware dish and cover with the chopped onions the chopped green peppers, the chopped parsley and the peeled, chopped and de-seeded tomatoes. Season and sprinkle with breadcrumbs and oil. Cook over a low heat, stirring occasionally to mix the ingredients and make sure it does not stick. When it is half cooked, pour in the white wine. When the squid are tender, remove from the heat and allow to stand before serving.
