"Alajú" is a sweet with a very ancient tradition that began to be made during the period of Arab domination.
It is made of a paste of honey cooked with almonds, walnuts or pine nuts, toasted breadcrumbs and spices like cinnamon, clove or caraway. The mixture is placed between two wafers and a kind of cake is obtained about the thickness of a finger, with an exquisite flavour. It is typically eaten during the Christmas period, although it can be found on the market during the rest of the year.

- The alajú made throughout the Valencian Community, especially in Utiel, is high quality. It is also made in the neighbouring province of Cuenca, where it is highly thought of.
