Ingredients for 2 portions: 2 medium-sized potatoes 125 gm of good quality spicy sausage 1 spoonful of chopped parsley Extra virgin olive oil and Maldon salt.


Wash and peel the potatoes. Cut into large pieces. Place the spicy sausage in a single lump and the chopped potatoes in the plan with plenty of water. Heat gently and allow to cook without boiling for about fifteen minutes. Then remove the potatoes and the spicy sausage, cut into slices, onto a dish or two flat plates. Sprinkle with the olive oil until they absorb it slightly. Sprinkle over the chopped parsley and plenty of Maldon salt.
