Ingredients: 'Boliches' (a kind of round bean from Huesca) Pig's ear Pig's tail Onion A few cloves of garlic Bay leaf Parsley 1 tbsp of olive oil Salt Boiled egg


Leave the beans to soak overnight. Wash, drain and put the beans on to boil covered in water; a piece of pig's ear, a piece of pig's tail, half an onion, a few cloves of garlic, a bay leaf, a sprig of parsley and a spoonful of pure olive oil. Leave to simmer and once cooked, add salt and crumbled boiled egg yolk.
