Ingredients for 4 people: 1.5 kg of courgettes ½ kg of onions 6 eggs 2 dl of olive oil ½ glass of water Salt
Preparation
Place the cold oil with the water and a pinch of salt in an earthenware dish over a low flame (it is best to cover it). When the water has evaporated, fry the peeled and sliced courgette along with the onions, cut in julienne strips. Place the vegetables in a colander. Then beat the eggs and mix with the courgette and the onion. Place in an earthenware dish to set.
Presentation
Serve immediately.
