Its essence is still unchanged after thousands of years of cultivation, while the methods for extracting it have been perfected. Over time its uses have multiplied, with different varieties emerging, such as refined oil, olive pomace oil, and the well-known: virgin olive oil.

As with all the best-known Spanish products, its quality is guaranteed by the certificate of Designation of Origin. In the case of olive oil, this means the product is unaltered from harvesting until it reaches the consumer, conserving all its scent, flavour, and vitamins. As well as these unique qualities, there is another, reflected in the name: extra virgin olive oil.

In Spain there are 27 Designations of Origin, each with individual qualities that make them even more excellent. They are scattered all over the country. Andalusia, in southern Spain, has the most: a total of twelve. The rest are distributed among Catalonia, Castilla-La Mancha, Extremadura, Aragón, Balearic Islands and La Rioja. In Andalusia, the province of Jaén is a required destination for olive oil enthusiasts. One of the most characterful areas in this land of olive groves is Sierra Mágina, in the middle of a nature reserve. A visit here is an encounter with nature, and with good food thanks to its regional cuisine.In Castilla – La Mancha, Olive oil from the Montes de Toledo is considered one of the best in the world. The town of Mora is home to the Olive Oil Museum, where visitors will find a collection of pieces relating to the history and cultivation of the olive tree.
