Fried tench Jerte style.
Ingredients for 4 people: 4 tench 1 clove of garlic, chopped 100 g of chopped ham 50 g of pine nuts the juice of 1 lemon 1 lemon 2 dl of water 2 dl of oil 1 tbsp of chopped parsley salt
Wash and clean the tench (it is best to leave them to soak for a few days in cold water to avoid any taste of mud). Season inside and out. Heat the oil and fry the tench for 2 minutes on both sides. Drain on absorbent paper and place in an oven dish. In the same oil used to fry the tench, fry the garlic, ham and pine nuts. Once browned, add the lemon juice and water. Pour the sauce over the tench and place in a preheated oven at 180º for 10 minutes. Serve the tench garnished with slices of lemon and parsley.
