Ingredients: 1kg of potatoes water and salt olive oil sherry vinegar parsley fresh spring onions
Cook the potatoes whole without peeling them with water and salt for twenty minutes, pricking them from time to time to check if they are soft. Then, peel them and cut them into rounds. Dress them while hot with parsley, chopped spring onion, oil, salt and vinegar. Allow to cool and serve.
