Ingredients for 4 people: 700 gr salt cod, torn into strips 1 onion 100 gr black olives 300 gr tomato 2 dl oil freshly-ground black pepper
Pull the cod into pieces with your fingers and leave to soak in abundant cold water for about 40 minutes, changing the water two or three times. Once the process is complete, remove the cod from the water and squeeze gently with your hands to eliminate the excess. In a bowl, add the thinly-sliced onion, the peeled tomatoes –either diced or grated–, and the olives. Add the cod, and mix all the ingredients together well. Finish with a grinding of black pepper and the oil. Add salt if necessary.
Leave in the fridge for about 30 minutes and serve cold.
