"Alajú" is a sweet with a very ancient tradition that began to be made during the period of Arab domination.
It is made of a paste of honey cooked with almonds, walnuts or pine nuts, toasted breadcrumbs and spices like cinnamon, clove or caraway. The mixture is placed between two wafers and a kind of cake is obtained about the thickness of a finger, with an exquisite flavour. It is typically eaten during the Christmas period, although it can be found on the market during the rest of the year.
産地
The alajú made throughout the Valencian Community, especially in Utiel, is high quality. It is also made in the neighbouring province of Cuenca, where it is highly thought of.
