The Monterrubio olive groves are relatively new, but the high quality of the oil they produce is an essential reference for olive production in Extremadura.
It is Extra Virgin Olive Oil, obtained from the olive of the Cornezuelo and Picual or Jabata varieties. It is produced in the natural Serena region, in the province of Badajoz. Only Extra Virgin oils with an acidity of less than 1% are protected under the Denomination of Origin. As a protected product, the olives are harvested with great care, by mechanical or human (preferred) methods so that the olives are not altered in any way and the qualities of the oil are preserved. It is a very stable oil, yellow to greenish-brown in colour, with a fruity, aromatic smell, and a slight almond, spicy flavour.
The Denomination of Origin covers the area that includes the towns in the regions of La Serena, Siberia and La Campiña Sur, all in the east of the province of Badajoz.

The olives are harvested in December and January, and it is sold year-round.
