Aragonese almonds form part of the characteristic confectionery from the Autonomous Community of Aragon and, in particular, from the county of Maestrazgo in Teruel. These have been made traditionally since the Middle Ages and enjoy an excellent reputation throughout the country.
It was the Arabs who introduced the taste for making sweets into the country. Later this tradition was continued thanks to nuns in the convents, who have brought them down to the present day. Macaroons are sweets whose ingredients are almonds, sugar and egg whites; they are a similar shape to madeleines, with cracks inside; white in colour or slightly toasted, crunchy in texture and with pieces of almond distributed inside. This sweet forms part of the designated Maestrazgo Confectionery, with sweets covered by this Guarantee Mark since 2 August 1995. As well as macaroons (called "almendrados") this group of products is made up of "Alma" cakes, "Carquiñols", "Almojábanas" and "Mantecados".
