Ingredients for 4 people: 200g of capon fat ½ stick of cinnamon 4 good spoonfuls of sugar Peel of one lemon, dried ¾ l of milk 1 small glass of water 1 plate of dry bread scraps (several days old) ground cinnamon
Put the milk, the water and the cinnamon stick on to cook and, when it boils, add the capon fat in pieces and the lemon peel. Once 10 minutes with up, remove the cinnamon stick and the lemon peel and add the sops of bread. Allow to cook for 10 minutes more and at the end of this time remove the pan to let the soup rest. Serve in a dish sprinkled with a little cinnamon.
The soup can be eaten warm or hot.
