Griddled swordfish with peppers from Padrón

Ingredients for 4 people: 4 swordfish steaks 200g of peppers from Padrón 2 chopped cloves of garlic 4dl of olive oil 1 spoonful of vinegar pepper coarse salt
Season and oil the fish on both sides and cook it on a hot griddle for 2 minutes on each side. Wash, dry and fry the peppers in 3dl of oil which is not too hot. Continue cooking over a gentle heat. Remove from the oil, dry on absorbent paper and season with coarse salt. Heat the remaining oil in a frying pan, brown the garlic, add the vinegar and pour the mixture over the fish just before serving.
Serve the fish with the peppers from Padrón.
