Ingredients for 4 people: 1 rabbit 1 onion 2 cloves of garlic 1 sprig of rosemary 1 glass of dry white wine thyme parsley vinegar 2 ripe tomatoes salt pepper olive oil 4 potatoes


Clean the rabbit well, cut it into pieces and season. Put oil on to heat in an earthenware dish and cook the rabbit together with the very finely chopped onion. Add a glass of white wine and allow to cook. Mash a clove of garlic, rosemary, thyme and parsley in a mortar with a pestle. Add a little vinegar and add into the casserole dish. Add the chopped tomato and allow to boil. Finally, cut the potatoes into slices and put them in half way through cooking.


Serve hot.
