Ingredients for 4 people: 1kg clean squid cut into rounds 500g of small broad beans 4 cloves of garlic 1 large onion 4 slices of French bread 1 soup spoon of chopped parsley 2 teaspoons of vinegar 1 teaspoon of paprika 1 pinch of cumin 1dl of olive oil salt

Preparation

Fry the garlic in a casserole dish with very hot oil and then put them aside. Cook the bread in the same oil and remove it. Chop the onion very fine and brown it slowly. Add a little paprika and the squid, add water and cook for about half an hour. In the mortar, mash the parsley, cumin, garlic and fried bread. add the vinegar and a soup spoon of water and mix with the pestle until you get an even paste. Add the broad beans and the mixture from the mortar to the squid together with a little salt and cook for another twenty or thirty minutes.

Presentation

Serve in the same dish or in a serving dish.
