Beef from the Guadarrama Mountains (Madrid) comes from meat-producing cattle breeds, such as the Avileña, Limousine and their crosses with the native Serrana breed.
The meat comes exclusively from yearling calves; that is, from animals that are weaned at the age of at least 5 months, butchered at no more than 16 months of ages, weighing between 175 and 325 kg (females) and between 225 and 375 kg (males). It is highly nutritious and its basic characteristics include: between light red and red-purple in colour, fat in tones from white to cream colour, firm to the touch, slightly moist and a fine texture. It is a tender meat, extraordinarily tasty and of an excellent quality. Its qualities are due primarily to the natural feed.
