The high quality of Terra Alta oil has recently been deservedly recognised with the protection of a Protected Designation of Origin.
This is the Extra Virgin Olive Oil obtained from the olive or fruit of the olive tree mainly of the Empeltre variety and, to a lesser extent, the Morrut and Farga varieties. The olives are harvested by mechanical procedures that do not affect the oil, preserving all its flavour, aroma and characteristics. Only olive oil from trees at least five years old can benefit from the umbrella of the Designation of Origin The relief of the land helps create a characteristic microclimate that directly affects the olive and, consequently, its fruit. It is generally a clean oil, with colour varying between pale yellow and old gold, a fruity taste tending towards sweetness depending on how late the olives were harvested, with an intense, slightly almondy aroma.
