Olive trees have been grown in the Community of Madrid since time immemorial. Nowadays, the oil obtained is of an extraordinary quality, with a unique flavour and aroma.
Extra virgin olive oil obtained almost exclusively from olives or fruits of the olive tree of the Cornicabra variety. It is produced in various counties in the south of the Community of Madrid, where a total of almost 22,000 hectares are given over to growing olive trees. The olives are harvested manually and manufacturing is traditional. This is an oil with a fruity taste and low acidity, less than 0.5 degrees. It is bright yellow in colour with touches of green. Its fragrance and unmatched flavour are its outstanding features. Madrid extra virgin olive oil is protected by the distinctive 'Food from Madrid' mark. This label covers oils from Villarejo de Salvanés, Villaconejos and Navalcarnero.
