Galician 'leche frita'

Ingredients for 4 people: 1 l of milk 75 gm of flour 80 gm of sugar 2 egg yolks 1 cinnamon stick 1 lemon rind oil butter
Set aside a little milk in a cup, and the rest heat with the cinnamon and lemon rind. Mix the flour and the sugar in the milk in the cup, stirring until it is completely dissolved. Once it is well mixed, add to the boiling milk and stir energetically with a spatula, preferably a wooden one, for 5 minutes, adding the egg yolks. Remove from the heat and pour onto a tray previously greased with butter.When the mixture is cold, cut into portions, cover in flour and beaten egg, then fry in oil with several lemon rinds.
