Sierra de Cádiz olive oil

The area of the Sierra de Cádiz produces an excellent virgin olive oil, whose quality recently won it the classification of a Protected Designation of Origin.
Extra virgin olive oil, obtained from the olive or fruit of the olive tree, of the varieties Lechin (50% of the olives grown) and, to a lesser degree, Manzanilla, Verdial, Hojiblanca, Picual, Alameña and Arbequina. It is produced in the county of Sierra de Cádiz, between the provinces of Cádiz and Seville. Only olives harvested directly from the tree are authorised for making oil protected by the Designation. Its colour is light, clean and varies between deep green and golden yellow. Its aroma is very fruity and its flavour slightly bitter, spicy and balanced. Ultimately, it is an excellent quality virgin olive oil, with low acidity.

- Sierra de Cádiz, set between the provinces of Cádiz and Sevilla, nestling between mountain ranges like Líjar and Algodonales and closed off in the southwest by the Grazalema mountains, is the natural county covered by the Designation of Origin for this oil. Below it are the municipalities producing the oil, occupying a cultivated surface area of approximately 52,000 hectares.
