Oil from Fermosell is made in the place of the same name, in Los Arribes del Duero, Zamora.
It is an extra virgin olive oil obtained from the 'manzanilla' olive variety. It has been known since Roman times, when the traditional method for making it in mills was already understood. The manufacturing process consists of the phases of washing, decanting, spinning and filtering and excludes mixing with oils of other kinds. Manzanilla olives are oval in shape, rather similar to the shape of an apple, which is where they get their name (manzanilla means "little apple"). It is a high quality variety of olive, excellent for oil production. The oil yield is around 13-15% of the weight of the olive which, compared to other varieties, is very low. However, the quality of the oil is extraordinary. It is golden, fruity and with an acidity that rarely exceeds 0.3 degrees.
