Ingredients for 4 people: 12 spoonfuls of sugar 12 egg yolks 12 spoonfulss of water
Make a syrup with the water and sugar until it forms a strand when rubbed between the fingers. Beat the twelve yolks in a porcelain bowl and add the syrup, taking care that it is not too hot. Stir with a whisk until it is all perfectly blended. Put this mixture in the bain-marie and cook until it thickens. Remove from the heat and beat the 'huevos moles' with the whisk until they cool.
Serve cold in large individual glass dishes.
