'Olla de pava con pelotas'

Ingredients for four people: 150 gm of soaked chickpeas 1/2 kg of turkey 1 knuckle of beef A piece of bacon and another of big blood sausage 1 spicy sausage 500 gm of potatoes 150 gm of green beans 2 celery stalks 2 thistle stalks Salt and food colorant For the 'pelotas': 100 gm of minced turkey breast 100 gm of lean minced pork Half a sausage chopped A piece of chopped bacon 1 minced turkey liver 1 egg Breadcrumbs 1 slice of bread soaked and drained Pine nuts, garlic, parsley, salt Optional: a little cinnamon
Place the knuckle of beef in a pot and cook with the turkey in quarters and the bacon, and when it begins to boil, add the chickpeas in 4 litres of water for at least an hour. After this time, add the green beans and the chopped celery and leek. Cook for a further 30 minutes. Then add the sweet potato, the spicy sausage, big blood sausage and the piece of pumpkin and the colorant. A quarter of an hour later, add the 'pelotas' and cook until tender.
