Vinegar from Jerez, made from the local wines, currently shares their well-deserved prestige.
Vinegar from Jerez is made exclusively from wines. It is obtained by acetic fermentation of the first must of the wine. It is aged in wooden pots. The ageing process lasts a minimum of 6 months, and over two years for the Reserva Vinegar. Following the filtration and clarification processes, it is bottled for sale. Its colour is dark, concentrated and robust mahogany, and there are hints of wood in its smell. It is ideal for vinaigrettes and dressings and for flavouring different dishes.
