Octopus with potatoes and paprika oil

Ingredients

Ingredients: 500 gm of octopus 1 spoonful of Vera Okal paprika toasted 2 dl of virgin olive oil 4 small potatoes 2 cloves of garlic salt

Preparation

To cook the octopus: boil the water. When the water boils add the octopus and remove almost immediately to avoid losing the outer layer of skin, and cook for between 30 and 40 minutes. Garlic sauce: heat the oil with the roughly crushed garlic. When it reaches the desired temperature, remove from the heat and allow to cool a little. Then add the paprika and a little water.Leave to stand and transfer the upper part so it leaves a well filtered sauce. Potatoes: wash but don't peel the potatoes and place in abundant salt water, boil until they are ready but don't overcook.

Presentation

Cut the potatoes and octopus tentacles into thickish slices, and alternate to form a ladder, ending with the finest part of the tentacle. Salt and sprinkle with paprika oil.
