Ingredients for 4 people: 125g of rice flour 1l of milk 6 egg yolks 100g of flour 200g of lard 4 whole eggs 1 piece of lemon rind 1 cinnamon stick 7 large spoonfuls of sugar 2 spoonfuls of icing sugar
Preparation Put half a litre of milk into a saucepan with the sugar, the lemon rind and the cinnamon stick. Put it on the heat. Dissolve the rice flour cold in another half litre of milk and add it into the milk on the heat. Stir well until it becomes a thick paste. Add the egg yolks, one by one, continuing to stir. Lay the paste out in a serving dish so it is about 1cm thick. When it is cold, cut it into regular pieces, cover them in flour and beaten egg and fry them in the very hot lard.
Dust them with icing sugar and ground cinnamon before serving.
