Burgos: rest and good food
The province of Burgos is one of the best places in Spain to be immersed in culture, enjoy barbecues and pulses from the local farms, and try the bold dishes that are typical of Castile-León's cuisine. The food from this province is based on local, natural products that will enhance the pleasure of eating. These are austere dishes that have managed to adapt to modern culinary trends. They prove that such food is compatible with a healthy diet without abandoning the most deeply-rooted aspects of the popular tradition. In the province of Castile, lamb is the favourite meat. From the lambs they use practically everything, with dishes like roast lamb head, different types of lamb's feet stews and grilled lamb kidneys. Suckling lamb is something of an institution in the whole province, specially in Aranda and Lerma. But in a bold gastronomy such as the one from Burgos, lamb is not the only popular meat. Pork and all the different products that are made on the day of the slaughter of the pigs, such as sausages, black pudding and Villarcayo's chorizos are also excellent and a great source of protein. Locally-raised prime beef is also very good.
